This is perfect summertime recipe for a delicious and very refreshing afternoon protein pick-me-up!

Energising, Vegan, Gluten Free and super healthy, these POW balls are very quick and easy to make, plus they keep for a nice amount of time if refrigerated and make a lovely gift in a little jar if you’re heading to a party.

The active superfood ingredients in these balls are Maca and the Lemon Essential Oil. Lemon oil is extracted from the rind, which contains up to 10 x more vitamins and and minerals than the juice itself! Maca is high in Iron and Vitamin B’s which is energy enhancing.

Combined with oats, dates, almond butter and coconut oil these balls are mourish and satisfying, as well as being mood and energy boosting. What’s not to love?

Recipe (makes 20)

Gluten Free Oats 50 g 

Ground almonds 90 g 

Pitted soft Dates 200 g 

Almond butter 75 g 

Maca Powder 15 g 

Coconut oil (melted) 50 g 

High grade Lemon oil 10 drops 

Unsweetened Designated coconut 60 g (coating)

Instructions

Mix all the ingredients aside from the desiccated coconut in a food processor until a sticky ball forms.

Roll into 20 smaller balls or 10 and then coat in the desiccated coconut.

Store in fridge
